안녕하세요..
배미화입니다.
갑작스런 개인 일로 쿠킹클래스를 빠지게 되어서 너무 죄송합니다..
물론 모윤주 자매님의 훌륭한 지도로 더 좋은 시간이었으리라 믿지만요..
그레이스 자매님의 맛나고 멋있는 요리 즐기셨으리라 생각해요.
다음주는 쉬고 그다음주에 만나겠네요.
그때까지 건강하시구요 즐거운 얼굴로 4월 셋째 수요일에 뵐께요..

Tomato Basil Soup

Ingredients:

                1 can (14 oz) chopped tomatoes

                ¾ cup extra virgin olive oil

                1 stalk celery, diced

                1 carrot, diced

                1 yellow onion, diced

                2 cloves garlic, minced

                1 cup chicken broth

                1 bay leaf

                2 tablespoons butter

                ¼ cup chopped fresh basil leaves

                ½ cup crème fraiche

                Salt and pepper

 

Directions:

 Preheat oven to 450 degree F

Strain the chopped tomatoes, reserving the juice, and spread onto a baking sheet, season with salt and pepper, drizzle with ¼ cup olive oil and roast until caramelized (~ 15 min).

Meanwhile, in saucepan, heat remaining oil over medium heat.  Add celery, carrot, onion and garlic. Cook until softened (about 10 min).  Add roasted chopped tomatoes, reserved tomato juice, chicken broth, bay leaf and butter.  Simmer until vegetables are very tender, about 15 – 20 min.  Add basil, then puree with a hand held immersion blender until smooth.  Serve with a dollop of crème fraiche.

Foccacia Panini

Ingredients:

                ¼ cup mayonnaise

                2 tablespoons lemon juice (1/2 lemon)

                2 cans white meat tuna, drained

                ¼ teaspoon salt

                ½  teaspoon freshly ground black pepper

                Focaccia bread

                extra virgin olive oil

                Sliced Provolone cheese

                Arugula, washed & dried

 

Directions:

  In a medium bowl, mix together mayonnaise and lemon juice.  Add tuna, salt and pepper and stir to combine.

Cut focaccia in half and brush the outside with olive oil.  Place cheese on the bottom layer, then top it with tuna mixture, arugula and another slice of cheese.  Put the top half of focaccia.

Preheat a Panini grill or a pan and grill the Panini until the cheese melts and bread is crisp and golden, about 5 min.  Cut the Panini and serve.
